Program

Every year, we hire one apprentice to join our team for the full growing season. Our apprenticeship is part of the Hudson Valley Apprenticeship program, and apprentices are expected to work on the farm and participate in 60 hours of classroom education. The HVA is a vocational training program, with a curriculum that emphasizes practical skill-building for aspiring professional farmers.
Apprentices are involved in all aspects of Choy Division, including but not limited to greenhouse operations, transplanting, weeding, harvesting, post harvest handling, processing and packing orders, deliveries, tractor work, and weed whacking. There are additional opportunities for volunteer engagement and team leadership, if desired.
Opportunities for professional development and education off-farm are offered throughout the season as they align with the apprentice's own learning goals that we will work together to identify at the start of the season. This could look like leaving early to attend CRAFT tours or virtual workshops.
All of our apprentices share an interest in food justice, building an AAPI community-owned food system, sustainable agriculture, and ideally, hot pot :).
